You can already do this as a Homebrew monster. I'd went through it myself to see if it's workable for someone else, which I'm going to quote below rather than retype it out.
This is possible through the use of Homebrew. When you start to homebrew your monster, you can select an existing monster as your template. This will make your homebrew monster a copy of the existing one. You can then edit and modify the monster in any way you see fit.
Really, I just did it myself to verify and the one and only thing I felt I couldn't do was make this separation line red without adding the Lair/Lair Actions subtitle:
In literally every other regard, it looked exactly like an official monster.

Ideal: Customisable and printable monster pages.
