Both the PHB and Xanathar’s GtE contain great information on encounter creation. With DND Beyond, I believe, the process could be easier. If my players consistently update their characters, why not have the website assess the collective party’s strengths and abilities and assign a suggested CR rating to help make encounters easier to gauge and create? What do you think?
Unfortunately, challenge is a bit more subjective then that. And there is a LOT of factors to considered when objectively calculating what challenge a party can handle.
2 monsters of the same rating can pose entirely different challenges based on party composition.
Basically what I'm saying is that what you are asking for would take longer than it is worth to implement (you might be able to find web site that do this already too).
Only if you do it in a complicated manner or otherwise write up a brand-new method of doing so. The DMG already has those rules in place; the only thing missing is D&D Beyond showing it.
Why not go a step further and make an extension for running entire encounters through the website like http://kobold.club/fight/#/encounter-builder does. The Dungeon Master could use all of the books and resources they have on the website and build and run a full encounter and the website could compile the player's sheets and boom you've got an encounter going. It would make this so much easier to run an entire campaign without ever leaving the website.

This has my vote. It seems quite unnecessary to rely on 3rd party options when all the resources we need are close at hand here.
