There are a few monsters/NPCs in Princes of the Apocalypse whose stat blocks in the Monsters section of D&D Beyond lack art, but for whom there may be representative art in the actual adventure that could be used.
Consider the following:
Black Earth Priest - Appears in art at beginning of Chapter 6, and in the concept art in the Afterword.
Crushing Wave Priest - Also shown in concept art in the Afterword.
Elizar Dryflagon - Appears in Scarlet Moon Hall section of Chapter 3.
Grumink the Renegade - Is shown in the Dark Dealing in Yartar section of Chapter 6.
Sacred Stone Monk - Are shown in art in the Sacred Stone Monastery section of Chapter 3.
