As for the art style, it's based on what's readable due to the size they're rendered at on the character sheet. The actual depictions haven't changed
I used to see images like the one in your link, but now they look like this. What could have changed? I'm using the same monitor, the same computer, the same browser. Why has it decided to give me a cartoonish artstyle now?
While the assets may have been redrawn at some point to improve their readability across screens, the actual icons themselves haven't been changed

I misunderstood and thought you meant that D&D Beyond used different coin styles (ie entirely different representations than the currency presented in the Player's Handbook). You're totally correct that redrawing them is changing them.
Having done some digging to find a reference for the changes, it does indeed appear that this was done to improve contrast, and thus readability, of the currency icons, mostly likely to better support underdark mode.
A side by side for anyone wondering:
The less saturated original icons don't look like they'd read as well on the dark background.
As for being able to toggle the old icon style back on, if I had to guess, it's probably exceedingly unlikely.

I don't like the new look of the currencies.
Take it up with WOTC. It is their product, DNDBeyond just sells their product and the service.
Was a new book released where they changed the design of the currencies? What's to stop DnDBeyond from allowing the use of the old design?
The icons used for the currencies have always been used on D&D Beyond. They're taken directly from the Player's Handbook.
