Gorilla as in Bugbear or Gorilla as in homebrewed race? Cos a Gorilla shouldn't be smart enough to speak a language. That's confusing as hell.
DK: If you want to murder your party, roll an elven gloom stalker, have a talk with the other elf (I'm assuming they'll at least consent to not impede you), then murder the gnome in his sleep at night with the lights off. You'll win. Then you can either murder the gorilla or flee to ambush the gorilla in the future. The only build that generally shows up with a gloom stalker counter is the warlock, and your party has no warlocks.
At night time... well, let's just say that anyone that doesn't have Devil's Sight or see invisibility will get annihilated by a wood elf gloomstalker. First turn of combat: Three attacks, plus +1d6 to each from hunter's mark, +1d8 to one from Dread Ambusher, and advantage on all. This also has great synergy with the otherwise meh rogue assassin. Your Wisdom bonus added to initiative most like scores you three free crits at the beginning of combat- with Sneak Attack, hunter's mark, and Dread Ambusher's 1d8.

He also doesn't really talk out of game, so he has hand signals that he does to talk to us for a more Roleplaying experience
I'm sorry, I guess I am an old fuddy-duddy but this just would not work for me in terms of gameplay. It's one thing to have a beastmaster ranger with a pet gorilla. It's another thing to have someone playing the pet gorilla as their character. And not being able to talk... 3 or 4 INT... I would not be down for this sort of RP.
This isn't "not min/maxed" -- it's something else entirely. I'm not sure exactly what. Except "not my cup of tea" for sure.
But hey if it is fun, keep enjoying.

Many players and DMs consider maximally optimized characters with no waste and everything exactly perfect to be unrealistic RP-wise because nobody is just that perfect. We all have flaws and many of us are less than optimally suited either physically or mentally for the jobs we do.
But min-maxers will have the "everything exactly perfect" only apply in one part of the game, most likely combat, and thus be very poor at all other times during a game session.
Some consider min/max, power gaming, optimizing, and munchkining the same but there are differences.
This video from YouTuber Treantmonk, discusses the differences to try and set a somewhat standard so people are talking about the same thing. It’s not bad, agree with some not all.

That's an ongoing threat to real sophonts everywhere. If I were the GM the bounty on that thing's head would be staggering. You just described a fitting dungeon boss if the dungeon is a jungle. Jesus Christ. That's less intelligent than an actual ape. Ok, I'm with you all the way, buddy. Make an elven gloomstalker and let's put this thing down. Nothing that stupid can be trusted with adventurer levels if you want babies to sleep safely in their cribs.
