I'm a new DM starting a game with 3 friends. When I played before, our last DM had quite a few enemy characters that were human and homebrew. Is there a way to have these type of basic enemies (like an archer) without creating a whole character and still have their equipment and stats preset?
Welcome! Generally you'd use a monster stat block for enemies and NPCs, rather than using the standard character creation system. The basic rules have plenty of generic humanoid stats, including the archer, veteran, knight, assassin, priest, and mage. You can alter these as needed, such as by changing stats or including racial abilities.
If you want to fill in the holes in classes / levels, you can have a look at my homebrew "characters" as well.
Additionally, in my signature is a link for a thread in which I compile a list of monster abilities that mirror class abilities. If you want a monster with pseudo-class levels, tack some of those abilities on.
