Charts like this one or this one have been around for a while, but I would be curious to see what the distribution is like nowadays, in a world where which racial ASIs go where doesn't matter any more. Are Tortle spellcasters more common now that a 16 CHA 17 AC Warlock is possible? Are Gnomes finally going to stop being Wizards and Wizards only? Will Half-Orc Barbarians overtake Goliath Barbarians now that Grog is less in the public conscious? If anyone has a resource for this, I'd super appreciate it!
Tasha's may not have been out long enough for there to be much data, especially considering it's a supplemental book and not used at every game/table. So it's hard to actually gauge the difference outside of anecdotes.
I can only speak to my experiences, but I haven't seen any changes in what the people around me play. The stats for what they play might be slightly better, but the race/class combos are still based on their concept of the character and not which race/class combo is "optimal". It also has had zero impact on the way the games I am part of are played. The challenges are no easier and planning encounters aren't any more difficult than they were before.
Even with the flexible ASI, most races have secondary traits, and well-established expectations, that support their stereotypes.
A Gnome Barbarian is a fun idea because it is unusual, but once the novelty wears off, it's not going to be as satisfying as playing the big intimidating goliath.
If anything, I think Tasha's Custom Lineages is going to play a more significant role, as it allows for arbitrary creativity with the feat flexibility of a variant human. People can play that Gnome* Barbarian, with a little more tailoring, however, DNDBeyond isn't going to be able to register it as a "Gnome" within their metrics.
