So im in a bit of a pickle, our party has almost cleared tomb of annihilation and our dm says downtime is approaching, and that we should prepare for it... but i have no clue what to do!
For context, my character is a lvl 10 Sorcerer, Neutral Good, has 60k (gp) to spend (from a dungeon designed for 4 but we cleared it with 2 bec the others werent there for those sessions). im thinking of starting a business or something, but i just have no clue what kind of business a sorcerer would open. a magic school is for wizards, a tavern / brothel for bards (one other guy is making a brothel already too) but i cant think of anything that would fit with a sorcerer, or is just good in general.
Build an edifice that you're never happy with and burn all that coin with redesigns until it earns the name The Eternal Efacing Edifice. Maybe it'll be a dungeon for the next generation.

I agree with Xalthu. Maybe a Tome of Leadership and Influence. You have time to study it and get that charisma up to 22! If your DM allows it of course. It’s a very rare item.
Step 1: Scrbe scrolls for gold and pick up a proficiency in persuasion (if you don't already have it).
Step 2: Sell scrolls of spells you know. Buy ones you don't. Take on a wizard apprentice that can scribe those scrolls. Pay him very well to retain loyalty. Become a scroll salesman of a major city. Expand by franchise with the apprentice as General Manager.
Are you getting a whole campaign's worth of downtime at the end? Normally, downtime is doled out every week between sessions in order to explain why a career's worth of adventuring isn't happening in the span of a few months of compressed game time. I mean, there isn't a right way of doing things. However, I don't really understand what is going on here. Is this your character's epilogue? Is it a time break between campaigns? What do you mean by "downtime"?
What i mean by downtime is that we have almost finished tomb of annihilation and afterward theres gonna be a break of a year (ingame) before the party goes out adventuring again. we dont do any downtime between sessions
Xanathar’s Guide to Everything and the Dungeon Master’s Guide contain potential downtime activities. If you have access to them via campaign sharing in a DDB campaign, I recommend looking them over, or asking your DM is they could share the relevant pages if they have those books in hard copy.
To be honest, all you can really do is have an idea. With downtime, the DM basically decides everything for you, since it covers things outside of your immediate actions.
Unless you're really interested in having your character run a business, don't do that. There's nothing wrong with your character spending a year just enjoying themselves! Get drunk for a year, have a passionate romance, or whatever things you think are fun. You don't have to do anything that changes your character in any way. Some people will try to learn a language or something of that type, but only do that if it's what your character would do.
The one downtime thing I actually enjoy is controlling property. Buy a house (you easily have the money), get your DM to agree the layout and then decorate, lay traps, and otherwise make it to your liking. Of course, if the DM is going to send you off to the Elmental Plane of Fire or Acheron immediately when the next adventure starts, this is all a big waste of time, so check that first.
Are you going to RP the downtime one on one with the DM? Or are you just thinking of how you are going to blow 60k gold?
Since I doubt you have the time, I'm not going to recommend you purchase the wonderful hardcover book produced by MCDM (Matt Colville) called Strongholds and Followers, read it, and imagine what would be the best stronghold for a Sorcerer to build and dedicate to his power source, and then go on to use it to develop new spells and powers for your sorcerer. No, you probably just don't have time for that.
But suppose you could make some connections with other powerful figures in the world your DM is running that might either provide useful information or even add power to your character. As a sorcerer, could you buddy up to a noble figure and purchase some out of the way property in say a stony cliffside area where you could build some type of temple-ish thing and a place for you to call home? I was thinking about leveling a huge zone in the rocky terrain that jutted out over a lower area where you could stand in the center of your scribed circles and wards while the winds whirled around you and the lightning snapped and crackled before an oversized avatar of your god presented before you to tell you how (dis-)pleased he is with you but has a new challenge for you to prove your worth.
And next to this great helicopter pad there could be a tunnel that leads into the mountain where you have many rooms carved out for your numerous pursuits. And maybe this underground maze connects with a great crevasse that leads down connecting with unknown terrors that never knew of the surface dwellers. And maybe these many rooms cry out for a great hall with gilded columns and jeweled censers, and a great fireplace where something forever burns in a purple-blue flame. A hall with many of your favorite trophies on display for your rivals to see and covet?
It all comes down to your imagination and how your DM wants to handle it.
But consider that this is all just stage one ...

Are there any skills or tools you want to pick up proficiency in? You could spend the time and money training.
Or crafting a magic item maybe? A sorcerer would probably love a wand or two. or at the very least, some scrolls.

Ask if you can train to be a Chef then if that’s okay, take the Chef feat (without the ability increase) and cook for everyone
look at other feats that could be trained (rather than just leveled up) and ask if you can

Spend ¾ of your money on wine, women and song (or as appropriate to the character's preferences).
Waste the other ¼.
