Battle Master fighter. The Adem are trained in unarmed techniques, yes, but they're more about the warrior's code and force of trained arms than about the mysticism and overt ki nonsense of the monk. They're also exceptionally skilled warriors well known for highly advanced blade techniques, which matches up perfectly with Battle Master. If I were making an Adem, there would be no choice at all save Battle Master.
I re-read the book last month and I prefer a Monk, probably Kensei or Open Hand, but there are many different paths for the Adem to follow so it is fairly open to interpretation. The Ki stuff is a little off but you can downplay the magical side of things and focus on the rest. There's plenty of zen mysticism surrounding the Lethani, they focus a lot on self-discipline and martial arts (the Ketan), and their society is very structured and hidden from the rest of the world. That screams Monk to me.
