Stealing from or killing an NPC in a module can be problematic depending on which one. If you're running a homebrew campaign or a modified module it wouldn't matter. Modules are written with the mentality that the players are good heroes, not villains. I'm sure we've all played in games where almost everyone said they were good, but were actually thieving "murder hobos". Nothing wrong with it, just problematic for new DMs that are trying to stick with a published adventure. And normally I don't put much weight into alignment, but the ring is one of the few items in 5e that has a different interaction depending on if the wielder is evil. (Although stated in a non-specific way away the end of the item description) So with that in mind, alignment matters to it, if not the game in general.
Is there any reason why the lady didn't simply teleport away? I was under the impression that she knew how to cast Teleport, which she could have done immediately as soon as she had the ring in hand.
I get that it can be problematic, but if you read the adventure, it talks about the ring and if PC's encounter him and kill/defeat him, so it is possible. i fail to see the issue with this. It could be entirely out of the PC's hands that he dies (ie: Frost Giant finds them and kills him) and they gain the ring.
As a good rule, don't give an NPC anything you wouldn't want your PC's to have. All it would take is for a Paladin to detect evil, figure out the ring and then take it for destruction. or a neutral centered Rogue that may want it and is able to steal it. Does't mean the PC's are evil or murder hobo's (though some just are).

The player should take an immediate alignment change to Evil. Taking the Ring of Winter is one of the most Evil acts a character can do while in Chult - taking an evil, sentient artifact as part of your collection. It's sentient, so it will try to control the Wizard and corrupt him. When Artus and the Wizard meetup, the Wizard will have to then lie to Artus when he asks where the ring is. The player is now a villain of the campaign. I would have them retire their character and roll a new one.
Artus Cimber has kept this item in his possession for over a century.
So this human man has carried it for over 100 years without an alignment change.
And yet he is still neutral good? how can you inflict an alignment change that easily? So by the only other inference I can take from this, in your views and campaign world, the only other thing is that they "stole" it. So in your world, anyone that steals gets an auto alignment change to evil and has nothing to do with the ring itself.

Teleport is not on her spell list. I guess she was not acting as a party member? otherwise not sure why the party would attack her or why they would care if she got the ring. Plus the PC in question got the ring from a dead NPC being played by a person, while i usually don't loot party members, she wasn't one, seems all fair and good to me.
isnt Artus a century+ old human? only kept alive via the properties granted by wearing the Ring of Winter?
so, any scenario, where Artus is removed from said Ring for any real amount of time, wouldn't really result in him feeling or doing anything about it, as he'd be dead imo.
