Let's say I purchase Tashas Cauldron of Everything, and want to share it with my players so they can go over the new options for their character...
But.. that book has some puzzles with solutions in there toward the end...
Is it possible I can prevent them from seeing those pages that I want to hide from them, so it doesn't spoil anything, while still allowing access to the content that gives them options like new spells, tattoos, subclass stuff, etc?
Blocking content from being shared blocks the compendium content (simply said, others can't read the source anymore) but doesn't block the mechanics from being used in the tools, like the character builder. You can block the book from being shared, others won't be able to look at the pages so they can't see the puzzles, but everyone who you share it with will still have access to all the player options.

I figure the mechanics, spells, options etc would be available once via the character sheet builder, but was wondering about their ability to actually ready about them before choosing.
They can access the players handbook to read about the various classes and races before they choose to help them decide on what type of character to make.
So, when I tell them, 'Hey, I added a new player options..', I suspect they will be able to see a list of new options available in the character builder, but also suspect them wont be able to research about those options beforehand unless I share the book. Which means that they have to specifically look for something (i.e. already know what an artificer is, and then search for that to choose it, but if they don't already know what it is, they would have to read about it on a different website).
The basic mechanics information will be accessible via the Game Rules on the site's top bar. So they would be able to look at the entry in Classes for their particular class, and see the Optional Class Features for it, e.g. https://www.dndbeyond.com/classes/bard#OptionalClassFeatures
They would also be able to see and read about the available subclasses.
