Mordenkainen is actually statted up in a 5e adventure
He's the Mad Mage of Mount Baratok, in Curse of Strahd, and is statted up as an archmage with a modified spell block.
In practice, most notable named characters from prior editions of the game should be legendary figures with access to abilities that existed in the edition of the game they came from even if they no longer exist in this edition. For another example, Manshoon has multiple clones running around because he's using the clone spell from AD&D, which actually did let you have multiple active clones of the same person (with deleterious effects on sanity, but eh).
To be fair, in that instance he had also gone mad and didnt have his spellbook. IIRC, if cured of his madness he would just leave the party to their own devices while he tried to find his spellbook, although I think it was possible based on the card reading that he would help them.
What I am getting at is that the Mad Mage may not represent Mordenkainen at 100%, but tbh I dont really know either

I know this is super late, but any time I include Mordenkainen in my games, he is exclusively an NPC stat block. His spell list I give him are obviously all of his named spells and the obvious choices, but I also made new spells for him. Essentially, I give him a wish spell for every spell level that can cast any spell of that level or lower from any spell list. So he casts whatever I want him to whenever I want him to. It's a lot to manage and is severely overpowered. He rarely gets personally involved in the story and serves more as a mentor or someone hiring the players to fulfill whatever task he needs done.
