It appears to only be doubling the 1d8 for being a sword, but I could be wrong.
Also given the rarity and tables by level, you have be in the double digits in level to even find one.
To counter, if it isn't weapon damage then what type of damage is it?
Per Xanathar's, a rare item can show up in the 5-10 range. And even then, the item was just a example.
It's fire damage as an extra effect because of the weapon. Think of it like a paladins smite. With the new damage rules, the weapon die would crit, the smite would not.

Sorry, I was unclear. I think source may be a better word, rather than slashing/fire/radiant damage type. The damage doesn't come from the wielder, another creature, or another item, so IMO, that means the weapon has to be the source of the damage, and therefore doubled by a crit. To counter the "fire damage" explanation, can a Sun Blade crit? And if it does when hitting a undead creature, does it do 2d8 (base damage doubled) + 1d8 (normal Undead bonus) or 2d8 base + 2d8 more as a bonus?

No, because it's the same thing. Those aren't weapon damage, they are extra effects because of the weapon sure, but they still aren't weapon damage.
So it'd be 2d8(the doubled longsword damage die) + 1d8 radiant.
The Feat Savage Attacker only applies to the weapons damage dice, not things like smite or sneak attack. This implies there is a direct difference between weapon damage and extra effects, even if those effects are applied on the same attack that originated from that weapon.

All of those effects come from the character though, and work with any weapon. These effects work for anyone, but only from the weapon. It's not about being applied to the attack, it's about the source of the effect. Even with them being a "add-on", it's a add-on from the same weapon, and reasonably then counted as weapon damage.

For example, Flame Tongue? The extra 2d6 damage from the flames would still be doubled by a critical hit, as it is weapon damage, correct?
I don't think that is the intent.
