I would go for creatures that live on or under mountains. In World of Warcraft for example, the Dwarven racial mounts are mountain goats/rams, so that could be a good creature to base your Steel Defender on. Animals that burrow underground like large moles, armadillos or pangolins could have been encountered by your dwarf as well.

If you want something a little edgier, a kruthik would fit the 'underground burrower' theme too

It would also depend a lot on the dwarf’s personality. If they don’t like animals, it might just look like a robot dwarf. If the dwarf had a crush on a deep gnome, it might look like the object of their affection. If the dwarf was obsessed with stories they heard of the ocean, it could look like a shark, or a seahorse. I’d always go with it being something personal over cultural.
I tend to think of dwarves as one of the species with the most pride and chest-beating about how they are the best. I'd probably have my dwarf artificer make their steel defender look like a mechadwarf.
A google images search shows a lot of dog types and one particularly funky looking Owl Bear steel defender but for me I think I would go for one that looked like a miniature Golem witha shield on each arm and have it as a prototype and see if I can work up to upgrading it to a Stone Defender (see Mordenkaines Tome of Foes) and then upgrade it to a Shield Guardian. It doesn;t have to be something the character achieves but just gives a goal and a reason to go out adventuring.

Few thoughts, building on the ideas of dwarves being tough, stubborn, keen diggers and living in mountainous regions:
- Goat: native to mountainous areas and noted for a thrawn, contrary nature;
- Boar: also noted for their stubborn resilience;
- Bear: again, common in mountainous regions and tough;
- Giant badger: good at digging.
