Honestly, every boss fight apart from one that I've fought (either as DM or player) has been memorable and fun for different reasons.
Cryovain was our first boss fight ever. We had no idea what we were doing and it came down to a few lucky rolls.
The Chardalyn Dragon fight was incredibly memorable because they barely managed to chase it off after having lost two towns and scraped through the fight. They tracked it down to its lair, with a the escape hole above it leading to where it was being repaired. They came up with a genius plan involving Death Ward and a kamikaze Barbarian who pile drived right through it. I had a misprint of its head when I tried to 3d print it - I'm considering offering one, painted up, as a trophy for the Barb.
When we fought Auril the Frostmaiden, it was pretty mundane. Thanks to my buffing her stats it was a tough fight, but empty.
The biggest factor by far of whether a boss fight is really good or falls flat is how the players engage with it. The ones that went well, had some build up beforehand and emotional involvement. The Frostmaiden just didn't have any of that, so it just felt like a fight for the sake of it.
Some had minions, some didn't. Some had KOs, others didn't. Some had really interesting attacks, others had plainer ones. However, it was the player buy-in that mattered most, and that's best cultured before the fight.
If you're not willing or able to to discuss in good faith, then don't be surprised if I don't respond, there are better things in life for me to do than humour you. This signature is that response.
