Eh, that seems like more hassle than they’d want to codify as a player-facing option.
There's nothing codified there. It's just "talk to your DM" and the DM using the species creation rules (assuming they're in the 2024 DMG, I don't have that yet). There's no way way to create a balanced player-facing method of making a mixed species... but DM tools don't have that restriction, because it's up to the DM to balance them (or decide they don't care if it's imbalanced).
I've only read through the first 3 chapters so far, but those would be the chapters where I'd expect it to be and it's not there. It's a bit disappointing because they already had a template for how to do it with creating new magic items and creating new spells.
3 ) Grappling and Shoving lends themselves to OP maneuvers by the players, that if the DM use against the PC's, the players lose their minds. This iteration of the game missed the perfect opportunity to remove them.
On the contrary, I think grapple and shove being allowed on Opportunity Attacks is a sea change to the melee combat environment that helps make it more tactical and interesting, as many people have been asking to happen for years. "Tanking" wasn't really a supported play style in 5E, but it comes closer to actually being a valid style in 5ER. Not only that. But other melee abilities like Cunning Action and Step of the Wind to disengage become more important and valuable when any OA can stop you in your tracks. I think the DM should very much use grapple and shove against PCs, because it engages and rewards tactical thinking in melee combat, which was somewhat lacking and was requested by the community.
2 ) Half-elves and Half-Orcs should have remained as unique playable races in this iteration, as they have for 50 years.
Hard disagree, and an appeal to tradition is probably the worst measure of how good something is, to me. So yeah, we probably won't see eye to eye on this.

And while it is natural to figure out what you feel about rules by comparing them to previous ones, please note the topic of this conversation is specifically the 2024 core rules changes. If you find yourself discussing at length on how an other edition did something you may have derailed from the current topic to focus too much on another edition. Let's avoid edition wars please or trying to place worth on an opinion by how much someone has played.

FYI it doesn't. The only player options it guides you on are spells, backgrounds and magic items - no subclasses or species.

If you're not willing or able to to discuss in good faith, then don't be surprised if I don't respond, there are better things in life for me to do than humour you. This signature is that response.

As far as I saw, they dropped the species creation in the DMG

Odd decision, but it remains the case that "work with your DM" is the proper answer to this question.
