Maybe a dragonborn chosen to be the "host" of a platinum dragon (incarnation). Possible but as rare as deities' mortal children (Hercules and company).
Who is to say that Bahamut has not walked among the mortals of the multiverse and has found love over the many eons of his existance. DM's are allowed to do things like this and if a player came to me asking if the could i would work with them.
There are actually two lesser known Platinum Dragons, them being other Good-aligned dragon gods named Lendys and Tamara. Also in the canon of the Forgotten Realms, Bahamut created a type of dragonborn who can “ascend” into platinum dragonborn. Theres also the fact that dragonborn, and half-dragons aren’t the same. Dragonborn are more like Duergar than Tieflings, they kinda just got draconic powers over centuries of being around them and evolved from whatever they were before into a new race.

In a campaign I'm a part of, my character became a platinum dragonborn after dying and meeting Lendys (Draconic god of justice, & some say father of Bahamut). He was a green dragonborn, but when he came back he was different.
So I'd say that if your character has something big happen to him it would make more sense than just being platinum to begin with.

It's funny how ... some people think a platinum halfdragon would be ok - but don't seem to consider that a platinum halfdragon 300 generations ago could be how platinum dragonborn came to be.
Meh. I got to thinking 'what if there were lead dragonborn? Sure, there are no lead dragons, but that's just an excuse to make some. Too heavy to fly, propably. Maybe it has a slither move speed, because on any sort of soft surface, it's legs would sink into the ground. I sorta equate lead with entropy (for no truly apparent reason), so maybe it has, like, antimagic?
Anyways, I think if someone - particularly a GM - want's platinum dragonborn, then obviously there are platinum dragonborn.

So I wanted a dragonborn that is founder of her own clan. I'm torn about her origins tho I wanted some metallic dragon mixed with a fey dragon, and the latter being bahamut, But seeing as you all replied to this and I was reading this might not fit as well as I thought..would technically be a half platinum?? Idk.

It really depends on the human and if they can lay a bahamut sized egg.

It's from 3.5 Edition, which means that it has absolutely no bearing on 5E.
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
