The correct, up-to-date version of the stats for Yeenoghu are, like any monster, from the most recent sourcebook - in this case, Baldur's Gate: Descent into Avernus.
These are also the stats that are used in the Encounter Builder, although it does say "Out of the Abyss" below the monster name, this is because that's the first occurrence of this monster.

That would be my guess, and a good reason not to call D&D 5e inconsistent.

The spoiler below is for both Descent into Avernus and Out of the Abyss to a lesser extent. A thing to note about when Yeenoghu appears in Descent into Avernus is that
you don't actually fight him, only a copy of him that appears in a dream. It's possible he was watered down since you're in a real fight after having fought numerous minions, whereas in Out of the Abyss if you fight him, it'll be at the climax and he will be weakened from fighting the other demon lords and from Vizeran's ritual.
I would use whichever stat block you feel is appropriate, but the Out of the Abyss one would probably be more fitting.

Yeenoghu is presented in Out of the Abyss and later in Baldur's Gate - Descent into Avernus. Which version from which source is more accurate?
The differences are as follows:
Out of the Abyss - AC 22, HP 348 (24d12+192), Flail Damage 22 (2d12+9), Bite Damage 31 (4d10+9)
Baldur's gate - AC 20, HP 333 (23d12+184), Flail Damage 15 (1d12+9), Bite Damage 14 (1d10+9)

Technically, both versions are accurate and official 5e versions. The newest one is the up to date one, but a DM can use whichever they prefer.
I also just found he is listed in Mordenkainen’s Tome of Foes, but just in the book, not part of the DDB encounter builder.
