I'm just surprised that with all the race reprints, they didn't include Order and Arcana Domain reprints (Forge and Grave can be reasonably expected for people to buy Xanathar's OR Mythic Odysseys of Theros later this year, but Arcana and Order are in incredibly specific books).
I guess the needs of a pantheon are less important than the needs of racial options. If you don't have those 4 domains referenced, at least you can use something somewhat similar (Death instead of Grave, Light instead of Forge, Knowledge instead of Order…).
Races are definitely a more important part of a campaign setting than subclasses are. I understand why there were all the reprints, but it just makes a large part of the book useless to me as I have all the other sources of the reprinted races. I would've preferred having the Blood Hunter, or Gunslinger being printed in those pages, but they were likely required to be the races by Wizards of the Coast, and they are a key part of the campaign setting.

I was surprised to not see the updated 2020 Blood Hunter in the book. An updated Gunslinger would have been nice too (mainly to fix the guns lack of ammunition property).
Yeah, I'd always assumed that if they were going to make a Critical Role book that it would have all of their homebrew subclasses and classes in it. If you're making a book based on your homebrew rule that becomes official, wouldn't you want to put in all of the things that you've created that aren't official just to make it finally official?

To be fair, if WotC had taken homebrew content that had previously been available for free then called it official and started charging for it, I'm pretty sure that would have caused an absolute uproar from the community. That and I'm not sure if there would have been any issues with other third parties (gunslinger was adapted from Pathfinder, and I have *no* clue what the status is on that Tal-Dorei campaign guide that disappeared earlier this year...)
Sure, people would complain they'd have to pay, but it would be better balanced, and Wizards would officially approve of it, and you could use it in Adventurer's League. I think most people would be happy.

Matt Mercer's Gunslinger subclass is a conversion of a Pathfinder class, and neither it nor the Blood Hunter class really follow typical 5e design conventions. (There may also be possible complications from having been published on DMsGuild as a third-party product already, and obviously Matt/WotC may have other reasons for not publishing it in the book as well.)

I am ok with the current state of the Blood Hunter, but Gunslinger could use a bit of work. I am not fond of the misfire rules as they seem really just there because "Eww Guns".

The valid sources for the Forgotten Realms and Eberron campaigns in AL are listed in the corresponding AL Player's Guide PDFs found in the D&D Adventurers League Player and DM Pack on DMsGuild.
For the FR campaign, the valid additional source options for the PHB+1 rule are: the Elemental Evil Player’s Companion (EEPC), the Sword Coast Adventurer’s Guide (SCAG), Volo’s Guide to Monsters (VGM), Xanathar’s Guide to Everything (XGE) [The Tortle Package is counted with XGE for AL purposes], Mordenkainen’s Tome of Foes (ToF), and most recently Locathah Rising (LR). Other books, such as the Ravnica book and now the Wildemount book (and presumably the Theros book once it comes out), are not valid choices. (Some variants like Human Languages from SCAG and Blessing of Corellon from ToF are allowed to be used regardless of your PHB+1 choice, but races, subclasses, spells, etc. must all abide by the rule.)
The Oracle of War campaign set in Eberron doesn't have a PHB+1 rule, but rather only a very limited list of source options. The only valid sources are the PHB, Eberron: Rising from the Last War (the Wayfinder's Guide to Eberron is only valid when its content exactly matches E:RftLW), and most recently Xanathar's.

If the player doesn't want to play a specific class, I'd go about it like this:
- Increase their strength by 2 OR they gain the Toughness feat
- During stressful situations the PC has to succeed on a Wisdom or Charisma saving throw (their choice, wisdom is usually willpower but I've also read charisma to be strength of personality so both fit). DC = 10 + PC level (as the PC grows stronger, the beast grows stronger). If they fail they cast the Primal Savagery cantrip on a random living creature they can reach with their movement. If they fail by 5 or more, they turn into their lycan form. In that form they are NPCs under your control, gain +2 to Strength, Dexterity and Constitution and Regeneration (5 HP per round, negated by Silver). At the end of each turn they can repeat the saving throw and if they succeed they shift back into their normal form and are in control again.
- During full moon they inevitably change as described above, but can make a save once per hour.
- They can learn to control that curse / gift. Some stronger lycan could teach them how to embrace their wild side without losing control. Or a monk might teach them how to control the beast through meditation and inner strength. If they control the curse, they can switch back and forth between their forms as an Action and gain the Primal Savagery cantrip.
- Remove curse or something similar can cure them
- "Normal" combat isn't stressful enough. But when someone roles Death Saves I'd say they have to role their werewolf saves as well.
Also, if the Twilight domain cleric ever is release officially, that seems to be a good mix with the Pallid Elves.
