Hello. I'm new to this website (coming from roll20) having been recommended by a friend. I am in the process of creating my character, and this particular one is using a few custom choices for stats and abilities. However I noticed that I cannot manually edit by sheet to change ability scores or add new abilities, or even add a custom race name, like I can in roll20 for example (Not that I've found anyway). Everything here is a bit complicated for me so my question is: Can I manually edit my sheet to my liking or am I limited to the options the character creator gives me?
This helps, thanks. As an additional question, am I able to get a blank character sheet and just edit stuff from there? Like clicking on a particular score and editing the number; creating a custom ability and/or feat and write it on my sheet, as examples? Thanks again :)
There is no blank sheet, the tools here are to fill the sheet for you. But once you've generated a sheet, you can edit saving throws or skill checks by clicking on them in the character sheet - the sidebar will open and you can use the 'Customize' dropdown to modify them. You can also generate new skills (like Thieves' Tools) by clicking on the gear at the bottom of the skill section and using the 'Custom Skills' section (click '+Add Custom Skill,' then click on the skill it generates to edit it). You can't rename skills, though. Feats you would have to make using the homebrew tools first, but then you can add them from the character sheet (using them in the builder will only allow for the normal ASI/Feat usage, adding them from the character sheet allows for the fact that we often have to use feats to recreate other features that aren't fully implemented yet, like boons or UA variants, as well as DMs sometimes granting feats outside of ASI/Feat usage).
Basically, D&D Beyond is a lot more modular than Roll20. Roll20 doesn't expect a PC to need anything other than what's on the sheet, D&D Beyond wants you to be able to reference information in multiple ways, so by homebrewing that custom race, you can use it for multiple characters, or a NPC, etc. Roll20 is taking your paper sheet and penciling in the word 'Pixie' as race and adjusting your traits on the sheet. D&D Beyond says 'OK, go make the pixie race. Now whenever you ask for the pixie race, it's here, all set up.' Small amount of work, multiple times, vs Larger amount of work, but only once.

As for renaming a race, you could homebrew a new race with whatever race as the template and then just edit the name and leave it at that.
