Volo’s Guide to Monsters and Mordenkainen’s Tome of Foes are no longer being sold on DND Beyond as their content have almost entirely been reprinted and updated in the recently released Mordenkainen Presents: Monsters of the Multiverse. It is unreasonable to expect users to update all references to the previous books in years old posts, especially when the change between books has been recent (earlier this month).
Its safe to assume going forward any references to the previous two books can be now found in the latter.
If you want just the Tabaxi race, go to MMM's page in the marketplace, here
Then scroll way to the bottom, past a LOT of monsters till you get to the races. Tabaxi will cost you $1.99 or you could get all 33 races in the book for $9.99, or you could buy the whole DDB edition of the book for $29.99.

Yes, the removed all piecemeal options. If you want to buy a specific race, you now need to buy the whole book instead.

Some people think they can make enough to noise to get the decision reverted, but this isn't the kind of change a company makes on a whim, so unless something dramatically changes I think it's safe to say it won't be coming back.

Yes actually, though you would get a plethora of other races as well and of course the monsters.
Alternately, you could try and go find a physical copy of Volo's second hand from E-bay; I just checked E-bay and it's 28.95 US.
Or... you can hunt around to find the Stat notes for them online and then implement them directly into the character sheet via the wonderful power of sheet editing.
