In an another thread a person brought up how tails don't have uses and i couldn't think of an use either. So o want hear what other people do with tails.
In-game, unless the character's race overtly calls them out as prehensile, there's really not anything players can do with them. At that point they're mostly just for flavor. That said, there's a lot you can do with flavor. A monk's unarmed strike doesn't need to be with their hands... they're free to use any limb they want, and depending on your DM, the tail is a viable option. A long-enough tail could be used to help bind an enemy, or a player might use their tail to express a character's mood. I played a game with a Tiefling character who's usually pretty chipper, but a strong visual cue that she's getting seriously angry was when her tail start thumping on the ground.
Tails are cosmetic in the game unless something in the race's traits specifically says otherwise.
When I play a PC with a tail, like a tiefling, I tend to describe how their tail shows their mood like a cat's or the way they stick their tail out to assist with balance.

Tails aid in balance. They should all get Dex +1.
Tails make tailoring quite a bit more complicated. All clothing and armor cost +50%. Found armor never fits and must be remade to help the PC.

Other common uses are swimming, functioning as a flyswatter, and communication.
They should also get the Dex bonus because then need to get through doors faster.

For Tiefling's I like to use Evil Inc's idea that the tails are extremely sensitive and mainly used for perverted reasons.
If you play with tattoos, it can be an additional appendage- more space
