aren't you able to choose celestial, fey, fiend, or undead as the chooses for what type of familiar they count as? the book was in curse of strahd for spell modifications.
That's something that's specific to Curse of Strahd, not the Find Familiar spell itself, but there's no reason why one couldn't use it in a campaign that isn't set in Barovia.
At your discretion, a spell can be modified cosmetically to enhance the horrific atmosphere. Here are examples:
Find familiar: The familiar is undead — not a celestial, fey, or fiend — and is immune to features that turn undead.

I always wondered why they didn't also add the weasel since its an NPC familiar.

Um, the weasel is one of the default familiars listed in the PHB spell description.

Just saw this and figured I'd mention there's the Stixhaven Mascot Feat that adds a Spirit Statue Mascot, Art Elemental Mascot, and a Inkling Mascot the book for it is Stixhaven A Curriculum of Chaos

If you were ever curious What can be a familiar for find familiar in 5E, well here's a list I have put together with the help of a bunch of other sources and other people to help you choose the familiar that's right for you! Keep in mind that no matter how "Official" the source is, at the end of the day it is still up to DM discretion to allow anything outside the base PHB although if they don't, they're a fuddy-duddy!
Additional Notes: There are some that are up for debate, Volo's Guide to Monsters on page 213(After Conjurer) mentions allowing tiny creature as a familiar such as Cranium Rat and Crawling Claw however it should be noted this is meant for NPCs not PCs so this would be DM Discretion. This also includes the Gazer, and Anvilwrought Raptor although some might be obtainable through campaigns.

Always study & sharpen philosophical razors. They save a lot of trouble.

Necroposting, but I believe in the adventure Frozen Sick there is an NPC with a Faerie Dragon familiar.
The 2024 PHB Playtest UA7 gives the following options for the Pact of the Chain:
Imp, Pseudodragon, Quasit, Skeleton, Slaad Tadpole and Sprite.
Flying Snake too :)
I believe you can have Pests, Inklings, Art Elementals, Spirit Statues and Fractals as familiars too from Strixhaven
