My vote is continuing where we left off. Vreat thing about adventures is that there's always another one! When we finish this one, I'm sure there's a way to write into the other you had in mind.

So two new things, I am introducing boons, small bonuses when someone makes a natural twenty and yet nothing is actually going on. These boons just provide minor benefits, if you want a more permanent boon, then seek a Stone of the Ancients, which grants a blessing- similar to skyrim.
Additionally, I am also implementing a cover system that you may wish to use, since we don't actually have a map, we'll just make the basic assumption there is cover. So following is rules for cover if you should wish to bother with it.
This rule uses the idea that characters would still like to gain cover, yet without a map, this can be difficult to track and keep reasonable. Thus, I propose that instead, you may "grab" cover, but it comes with a bonus to armor class and dexterity save with a penalty to ranged and ranged spell attacks. Depending on the type of cover available, you can gain a bonus/penalty to AC/Attacks. Typically, cover is a given, however, the DM has final say, and will typically let you know if there is no cover, or if certain types of cover is not present. Ranged attacks include all attacks, mundane or magical, with a range.
Interesting thought: I think part of the old AD&D ruleset actually differentiated between cover and concealment. Would the two be too hard to discern? Cover is anything that directly impedes an attack (rock, wall, etc.) while concealment is anything that blocks visibility, but not the attack (a bush, curtains, grass).
Would it suffice to just downgrade the level of "cover" if you only have concealment? Let's say you are in chest-high, somewhat patchy grass (3/4 cover). You have not been seen, but thr enemy is in pursuit. I might propose that 1/2 "cover" is given for trying to remain relatively unnoticed (unseen/unengaged=1 level down). After you ambush the enemy, the definitely know where you are, so you get 1/4 cover (they can easily shoot through the grass and judge where your torso is). Known location behind concealment= 2 levels down. Now, if you are mobile in this 3/4 concealment, your position rapidly changes and the enemy has to account for it. Moving on your turn anywhere but toward the enemy improves defense and only reduced by 1 "cover category/level".

5th edition does have concealment, it is based on light, called obscured, with lightly obscured [bushes/foliage], heavily obscured [thick fog/darkness. Which I am going to include, but for concealment, I toying with borrowing XCOM 2's concealment, that lets say, everybody has a passive [concealed] stealth check equal to their dexterity + your dex modifier. If anybody is searching for you, then we use the passive stealth to remain hidden. Or something like that.
