do you have access to any old Al'Qadim setting material? There are some islands to the SW of there that are specifically for Sinbad type adventures. It could work well with Odyssey as well. Heck, the original Odyssey was in the Mediterranean. An angry sea/storm deity could keep nautical PCs going around in circles in big enough lake. Maybe they get hit by frequent storms that are also a type of gate, and they never know where they will wind up?
That's a lot like what I'm doing! :) I'm integrating things like weather and navigation as mechanics! I'm actually writing a "Sailing Supplement" for all of the movement mechanics of sailing in the module. Keeping it simple like movement in the PHB

Oh jeez, now this is something I've also been researching too Pain in the butt it is since there's very little official 5e sources about the locations on Toril other than Faerun and even then things get annoying when you go west and find practically nothing on Anchorome and only a really old expansion for Maztica not to mention all the missing information about Laerakond and what was going on in Maztica while the two were switched

Abeir, Anchorome, Kara-Tur, Katashaka, Maztica, Zakhara, and Laerakond need some 5E love
DMs guild has a module on Maztica, and on the area south of it called Lopango. pretty good reads. sufficient web surfing for maps of Toril will turn up some interesting geographical features you can build your own world around.

It's likely going to be a long, long time (if ever) before we see a 5E update on the rest of Toril.

fifty year and still nothing for the sea ? where is all the creative souls out their,, who has not read those tomes of the master and commander or horatio hornblower. heck even Moby Dick .
their are a lot of fun in sea adventures a groups is set in a 35 foot wide 120 foot long three decks of room with 120 other persons , the drama alone is very busy let along the drama of the sea. the down time is for sure a killer unless you understand the sea and the life on a boat in the age of sail. but throw in magic and vast sea teaming with magical fish and well what the heck are you doing crawling around in a dungeon? ever find a ghost ship at sea and realize its an island? , or find an island and realize its a giant sea Dragon? lets not for get about all the underwater fun, got water breathing potion? how about a ship that can dive below the waves magically enchanted to allow the crew to survive? now what your excuse for its boring at sea?

It's likely going to be a long, long time (if ever) before we see a 5E update on the rest of Toril.
All that undeveloped real estate is a prime place to expand our/your imagination into the setting. Get your feet wet in the Faerun, and then move out to where there's some elbow room!
I've always liked the idea of a sea voyage...KUDOS! Might I add an idea? Whirlpool (portal) to the Elemental Plane of Water for a possible side quest, then the return trip dumps them somewhere completely different!
The Trackless Sea was named that way for a reason. However, if you ever decide to not use the Trackless Sea, you could always think about using the Celestial Sea.

Trackless sea does sounds like a good choice. The Great sea, south of Chult, could also be a contender with the presence of Zakhara as an almost completely isolated world/culture if you do want interaciton with settled places that would be very different (the same can happen in the trackless sea too of course!)

I might suggest picking up or downloading the PDF's Maztica Trilogy By Douglas Niles. These were a pretty good read.
