So I’m working on a dnd build that I will use in a campaign coming up, and I am looking to redo an old character concept idea that I had when I first started playing dnd. The Dinosaur Druid. I am going to take 17 levels in Primeval Druid (UA), but I am struggling to find a 3 level dip into another class. I find that the higher levels (18,19,20) have fewer good abilities (correct me if I’m wrong, I haven’t played Druid in a year and a half), so I’m looking to multiclass. Are there any classes that make a good three level dip into?

I'd say wait for it. You probably should wait to go into other classes until after level 17, which should be a long time. Maybe something fitting comes up during the campaign. Or you could just go to 20, Druids capstone is quite strong.
Outside of that: Cleric could be a good fit, it's pretty front loaded sinc eyou get the subclass at level 1, Wisdom will be you casting statt for both and you get your spell progression. Fighter 2 gives you Action Surge which is one of the strongest features in the game and lets you cast two leveled action spells in the same turn(only way to do this).
The other class depends on what how you see a Dinosaur barbarian. Do you want to your druid to be primarily a spellcaster or someone who leans on wildshape?
I agree with Sutlo there is no rush to decide, do you even know if the campaign will go to level 18? (Even if it i planned to many campaigns end early)
One not particularly obvious feature of druid 20 is you can cast spells without any components other than material components ate are consummed or have a price. This means you should be able to cast spells without being counterspelled and without being noticed. Depending on the campaign that could absolutely be worth sticking with Druid.
If you want to play on cheat mode take either 2 levels of twilight cleric or a level of peace cleric. Twilight is well known to be broken with , Peace cleric gives the whole party a once per turn guidance and bless without concentration 6 times a day for 10 minutes (which in reality means you can use it for virtaully all rolls) only exception is if the party member is more than 30 ft from any other party member, These optoins are so powerful I would discuss it with the group before committing to it.
Other cleric subclasses also work as a bit but are less broken pick one that offers what has a class featur eand channel divinity you like.
Other options depend on what stats are 13. Fighter is an option for action surge if you put 13+ into dex (likely). Porten with a 2 level dip in divination wizard is also a low level feature that is strong even at high levels but you might need to take a hit in you dex or con to get your int to 13 making it a less good option.
Monk and barb are often said to be good dips for druids bt I think this only applies to moon and (possibly) spores druids.
My tuppenceworth on a dip would be 2 levels of Paladin to be able to add smites to hits made by your Wild Shape. If that beast gets 2 strikes per round, you get smites on each. In addition, you get Lay on Hands - i.e. the ability to get fallen party members back on their feet 10 times! (if you "hand" out just 1hp at a time). Plus you get a few other detection abilities and the ability to wield any type of weapon.
That still leaves you with 1 other (you said dipping for 3 levels) so perhaps think about 1 level in Fighter. Two-Weapon Fighting lets you stike twice in normal form (with your Paladin's smite on each) plus Second Wind is useful at low levels when 1d10 auto-healing can make a difference in the middle of a battle.

Started playing AD&D in the late 70s and stopped in the mid-80s. Started immersing myself into 5e in 2023

I feel like barbarian is your best bet here, for sheer flavor alone.
