I'm building a one shot based around a heist. The party are a group of veteran thieves that are looking to score big on a known archaeologists house on the outskirts of a small village. The archaeologists is actually a mater thief and has set up his house as a test of the mettle of the groups that try to score on him.
I built the Archeologist to be a 7th level rogue with the intention of the party not fighting him, primarily focusing on the puzzles and traps (including monsters), and having the reveal at the end. I wanted to have a stat block of they decide they want to fight him. My first question would be what would be the best way to go about crating this as a one shot, and second, is the Archeologist too high, too low or something else?

You might check out the Keys from the Golden Vault sourcebook. The Masterpiece Imbroglio adventure is fairly similar to your idea, the crew has to steal a painting from a group that stole it from an ally, You'd probably be able to mine a lot of that content and adapt it fairly easily.
