So I enjoy introducing things my players haven't seen before and just saw monster mash. So I was wondering what creatures would be better with other abilities.
Once I ran an adventure where some Boars broke into an old Wizard's tower and ate a bunch of stuff from the library. It gave them odd magical powers, so I just took about six fun options from the Wild Magic table and rolled on it when a Boar needed a magical boost during a turn.
I also like stapling the magic item suppression power from the Conclave Dryad to various monsters when I want them to have a bit of cool flare and my players are relying on their magic items too much.

"The mongoose blew out its candle and was asleep in bed before the room went dark." —Llanowar fable
Whats scarier than a Dragon? A Dragon with 5 heads!.....unfortunately Tiamat is busy, but her Cultists are not, try pitting your party against their newest creations; the Chromatic Hydra's!
Step 1: Send your cultists out to find some dragon blood, Thats right folks, you get to prove your devotion to Tiamat by trying to persuade her children to donate some of their blood to the cause!
Step 2: Wrangle a Hydra.
Step 3: Persuade your Hydra to take a long bath in the dragon blood whilst you and your fellow cultists perform a ritual and hey presto we have a Half Dragon Hydra! They come in 5 flavours depending on the blood used; The Cryo-Hydra (White Dragon, Cold based), The Pyro-Hydra (Red Dragon, Fire based), The Fulmino-Hydra (Blue Dragon, Lightning based), The Acidus-Hydra (Black Dragon, Acid based) and the Noxious-Hydra (Green Dragon, Poison based).
Step 4: Find some lovely idiots...I mean well meaning adventurers to investigate the dungeon where the new creation is waiting.
The Half Dragon template can make a lot of very nasty/lovely creations.....

I like this a lot.
I think wings are definitely an option that can make a monster tougher to deal with, since all the sudden it has a flying speed and can get some distance. You can also have lightning bolt farts and acidic snot spray the characters when it sneezes.
Don't forget it can randomly enlarge/reduce, meaning that bear is now 60ft tall, and then suddenly 6 inches tall and then maybe back to 6-8 ft.
