Giving the Players a fantasy calendar for your world, and having them tick off the days ( or do that yourself ) works well. You can even mix in weather, seasons, and phases of the moon(s) that way. You can create a fantasy calendar easily, here: https://donjon.bin.sh/fantasy/calendar/
If you mean hours in the day - you could just tick off hours, and "spitball" how many hours have passed for scene transitions and rests.

I usually prefer not to worry about time too much, I prefer to let things move at the speed of plot. It might create a small inconsistency here or there, but the players have never noticed.

We are 14th level almost 15th level, reason why I was asking was some abilities on magic weapons reset at dawn and it would be easy to just keep a running tally of the time so I can say "hey its been dawn your item resets" and I don't want to "cheat" and do it too early or not give them the proper time and "cheat" them out of said ability by not saying you've had enough time.
I've only seen a hand full of games where time is a very important factor and one of them was a Monster Hunter influenced game mode on an island. Otherwise, you are just going to give estimates when people do their shopping or gathering rumours.
What might take a ten minute stop at a store in a tiny hamlet, it might take half an hour in larger cities until you find the one you want!
Maybe a late comment to this discussion, I'm mostly thinking of doing time tracking to add more realism to the campaign for the players. Things like a holiday or memorable event in the world or region they are travelling in.

Agreed. Time is "fuzzy" in RPGs, and people aren't timing that closely anyways.
