Do you allow pc's to take advantage of the choking mechanic? Maybe during a grapple they control.
Potentially it would allow them to kill any humanoid in just a few turns. Powerful wizard? Good luck strength checking out. Can't use verbal components during a choke likely.

There are no rules for choking someone. If you're referring to suffocating that's not something creatures can cause to happen with just a grapple or other check; only special abilities such as the Cloaker's Bite attack can result in a creature suffocating. Even if you could, though, a creature can hold its breath for 1 + their con modifier minutes (min 30 seconds,) so it would need to be a pretty darn long grapple to kill them with it.
This comes up from time to time. Jaysburn is right. There isn't much in 5e about grappling or choking--only a very basic framework. Every time a thread like this happens, I say i'm interested in seeing what people come up with for a more involved grappling mechanic in the game. Admittedly, a lot of people wouldn't be interested in it, but for those of us who are, it would be some pretty cool homebrew.
Maybe I should be the change i want to see in the world and just make it myself in the homebrew forum.
That doesn't mean we cannot create our own system for it if it enhances our own games. I will say, though, that if I'm grappling with someone, they might be able to prevent me from making the somatic movements for spellcasting, but you would have to have your choke already sunk pretty deep to prevent someone from issuing the verbal components. I have had plenty of conversations with people while working through a triangle or guillotine choke.
I like the idea of making a second grapple attempt while you already control one to initiate the choke. Like the grappler feat allows you to make a second one to restrain yourself-except not useless.
Pathfinder had a pinned condition that prevented the pinned person from casting spells that had somatic components. While more complicated, I thought it was kind of interesting. That would definitely go into my homebrew grapple framework if I were to make one.
Do you know about the 3.5 class called the reaping mauler? It was a class built specifically for wrestling down humanoids and destroying them. Worth a look

Previous games had specific rules for choking things. Even a garrote wire as a weapon. They just chose to avoid them this edition
