I am creating an evil cemetery where a lich controls. But I need some suggestions for undead monsters or other monsters that would go along with this theme that would be good for characters level 5-7 in 5e. Thanks in advance!
If you don’t mind Homebrew content, JessJackdaw made a cool monster called the Mourner’s Mire. It has a charm effect upon being bitten that forces the player to return the graveyard after 8 hours. You can find it here on DnD Beyond in the Homebrew Monsters section!
To add to the ones already suggested: There are Giant skeletons and Greater Zombies for a higher CR take on classic undead. There are Revenants and Skeletal Juggernauts. And vampire spawn.
Bodaks are always fun if you want a TPK, even if there is only one, and the party is level 8, it can still be hard. Definitely good for a level 5-7 party.
Spawn of Kyuss are disgusting, and your party will quickly learn to hate them, but they are just so fun to kill your players with, and then turn them into worm infested zombies. Hard if you are level 5, super hard if one of you dies, which you likely will.
Wraiths are also great for this level of party.
Just an army of skeletons/zombies. This is great for this level range, because it isn't boringly easy, and it isn't too hard.

Mind you zombies can be harder than you think thanks to undead fortitude. I had a group of level 6 characters who had a tough time because I kept rolling high on the undead fortitude save.
This is a great idea and I love the ideas people have made. One idea I had was that your characters will be into a rhythm killing all the undead. How about throw in some living apprentices, perhaps specializing in non-necromatic spells? Or even a crazy evil druid who values the dead part of the cycle of life?
An entangle spell that uses bones instead of plants? Suddenly having dead hands and arms sprout to hold the PCs is a great visual.

Wights, ghasts, ghouls, wraiths, even mummies.
Skeletons and zombies don’t have to be humanoids too. Zombie animals and monsters are always good to throw in the mix.
