I have been working on ship mechanics recently. I scaled all ships to have speed of 3 miles per hour. I also made a simple formula for crew / passengers / cargo.
As long as it's consistent in your campaign, it doesn't matter. Given similar design priorities bigger ships will be slightly faster, but that's usually outweighed by differences in design goals.

Curious what ship speeds people use in their campaign? The speeds in Ghosts of Saltmarsh differ to those in the DMG eg
