I'm thinking of arranging an arena combat situation for my 7th-Level Life Domain Cleric, who usually relies on the rest of the party to do the damage rolls. What's a good match for her? I'm thinking single combat, but fighting two or more lower CR monsters could also be fun. I'm guessing I make a little bit easier encounter than would normally be balanced for a single 7th-Level character, since a lone Life Cleric is probably a little weak vs. say a lone Barbarian.
I think Xanathar’s Guide to everything has a table that checks how many monsters of a certain challenge 1 player can take based on level. If you don’t have xanathar’s Guide to everything, you could use the XP thresholds in the DMG, which aren’t perfectly accurate, but should still work. I’d say start off with an easy or medium fight/s to get a feel for it and then up the difficulty based on that.
I wouldn't make it easy on them. After all, a life cleric is incredibly, incredibly good at staying alive. Also, a cleric is not really all that specialized, and can change its spells to fit any situation. If the arena situation is non-deadly if the cleric fails, I'd make it a deadly encounter. Otherwise, I'd make it hard. So maybe a slightly toned down CR 4 creature. Not quite CR 3, but not all the way to 4 either.

I'm looking at Ancient Construct. It has a Slow ability somewhat similar to the Slow spell in that it prevents taking both an action and a bonus action. That could mess with her Spiritual Weapon.

Depends a bit on build and situation. Assuming full spell slots and reasonable gear, it should beat a CR 3 handily, has a respectable chance against a CR 4 enemy, and probably loses to a CR 5.
After all, a life cleric is incredibly, incredibly good at staying alive.
Yeah, I just saw she has Death Ward. Just cast that (I think in the arena they get a couple free rounds for buffs before the fight), and then when you run out of hit points, use Channel Divinity: Preserve Life and be right back to half HP next turn.
