I've been thinking about the idea of creating a campaign focused on the mythology of the Vikings and I already have many concepts such as some special rules, races, settings, etc. But like to hear from you If you guys have additional ideas that you think you should consider to make these adjustments.
Also I would like to ask you fellow DMs if there is any module that you think can be reskined to this mythology and used as a part of story I'm trying to build from scratch
I think you need to consider culture and technology. Culture will determine how people react to different scenarios. It might change what is considered or isn't considered a crime.
The Vikings aren't going to have plate armour as wasn't invited until later. I don't think they used crossbows, even though they were around at the time, and I don't think they really used cavalry.
The flavour of spells would also be something to consider. I would look at Viking mythology and see what kinds of things are used.

The best you're going to get from a module reskinning is Ghosts of Saltmarsh. There's also an argument for Rime of the Frostmaiden. WotC has notoriously snubbed the Norse in 5e, especially with the fact that even their "Rune Knight", while based on Norse myths, is reframed to act nearly nothing like it did in those myths. You're not going to find much helpful content there.
There is an adventure called Against the Giants. I think it was spread out over G1, G2, and G3. It was updated to 5e in TftYP. I can see this being reskinned. It's really good on its own, but a reskin might be even better. Something to do with Loki and ice giants.

If you want to put in the work to reskin the stories a bit I'd recommend Rime of the frost maiden, storm kings thunder, and storm lord's wrath.
