Hollow unbreakable arrows are the most OP common magic item, and my current method of coming up with insane combat shenanigans.
if you make a steel pipe with one end closed and a nozzle on the other, you can enlarge it, fill with any liquid, and then drop concentration, creating a high pressure squirt gun. (or a pipe bomb, depending if it holds)
I could spend a lifetime recommending things you don't like and won't use. I might consider browsing around to find something that sounds like a good time and tailor it to suit my needs.

I swear by Adventures Await! Studios' free content. They've loads to choose from and don't require much work, but you may be stumped if your players are inquisitive as to how or why things are the way they are. The Duelling Knight's Fungeon Dungeon is my all-time favourite.

A single encounter with multiple creatures. Get drawn in by Will-O'-Wisps stay for the Scarecrow. Raise the difficulty level and use your DM power to make the Scarecrows "Terrifying Glare" paralyzing condition a trigger for the Will-O'-Wisps "Consume Live" bonus action. Nothing like the threat of death to add some fun.
Of course adding Will-O'-Wisps or an additional Scarecrow will also add to the difficulty.
Did you ever play paper mario the thousand year door? There was a level in that game that ive wanted to do a 1 shot of where the party are a group participating in a tournament style fight to win a prize, but as they get closer to the final match, they start getting threats and poisoned food "from a fan" that put them in danger of missing a match, thus forfeiting and losing the tournament. The party suspects that its the guy at the top not wanting to lose his spot, but hes actually oblivious, and it turns out its the manager of the top fighter, not wanting to have his champ lose. Modify a few details around, do some dungeon crawl/investigative work, and get a bit creative with the arena fights, and i think it could be a fantastic 1-shot.

I will always advocate Adventure Lookup for this. Just filter on system (5E), number of pages (probably about 10 for a 1-shot) and your level range.
