New DM and have got a few questions with regards herbalist kits..
Had a number of questions, and been looking through my source books(PHB & Xanthars)
It says you can make a potion of healing for a cost of 25GP...
But my party have Dragon Bile, Nightshade Powder & Mercury all worth 25GP each...
So I am thinking that they can use each of those ingredients to brew a potion for each ingredient...so 3 ingredients worth a total of 75GP which will allow for 3 potions which will take 1 day each to brew

Is my interpretation correct?
Magic item recipes are an optional rule which could apply, alternatively those items would come under miscellaneous treasure or alchemy supplies. This means is you can run it a couple of different ways.
any ingredient can be exchanged for any other the three together make up a total of 75g misc alchemy supplies they can make anything with. With this when ever they find any alchemy ingredients it adds to the stock and they don't need to go to a store or anything .
Using the magic item recipe rule, those are the ingredients for the recipe, they take some of each every time adding up to the cost of the potion so 25/3 g worth of dragon bile ect.... ultimately they can make 3 potions but it also means they'd need to find these or equivalent ingredients in the future. You could also choose any ration you want so maybe it requires 5 gold of dragon bile and 10g of the other two in which case they can only make 2.
These items are treasure and can be sold to an alchemist with what ever rules you use for selling an item. They'd need to find an alchemist to sell it they might get more or less of the value depending on what ever factors you want to effect the price and then they buy the potion ingredients that you can name or choose not to.
If you want you could combine 2 and 3 to make them ingredients and treasure.
