Conjure Undead (1/Day). While holding the Wand of Orcus, Orcus conjures Undead creatures whose combined average hit points don’t exceed 500. These creatures magically rise up from the ground or otherwise form in unoccupied spaces within 300 feet of Orcus and obey his commands until they are destroyed or until he dismisses them as an action.
If Orcus takes his first action to use this versus a group of 5 level 20's, and summons a Nightwalker and a Lich, both which collectively have an average HP under 500, would that be considered an extremely unfair fight on the player's behalf?
Do Orcus' conjured creatures drop dead the moment he does?

There are lots of choices for that ability that are pretty unfair on the player's behalf. Summoning 6xdemilich would likely not go well for the PCs either.. Orcus, with his wand, is definitely more dangerous than his CR indicates.
In any case, they're level 20 characters. The should be able to handle a TPK, that's what things like clone are for. Try it on them and see what happens.
Appreciate the response! I guess it's just Orcus doing what Orcus does. I'm yet to run any level 20 sessions but the spells and items they will have at their disposal should be suffice. (Hopefully)
I agree with everything above, but thought I would add a couple of comments.
Orcus is not just powerful, but he is also super intelligent. If it were my game, I would plan out his first several moves (unless the PC's do something to change the situation) and play him to the hilt. With this in mind, I would probably have a brief discussion with my group before the game begins to make sure you are all on the same page. Some people really just want a light hearted, just for fun, no real danger kind of game, so if that is what your players want, then you may want to play things differently. Assuming they are all up for a real challenge, then let them know you do not intend to pull any punches, and they need to bring their A game, which sometimes means "knowing when to fold them", as Kenny Rogers would say.
Lastly, if you are really concerned about their PC's dying, then maybe have an NPC/game scenario in your back pocket to control the situation if it starts to go bad.
Hope that helps,
