I am going to put my players into a prison in the underdark and was hoping for some inspiration of the creatures there. these creatures would be diverse and would include stone giants and drows.
You are asking about who is keeping them captive or who is also in prison with the party?
What level is the party?
Side note: If this is the beginning of your campaign, cool. If this is part of your campaign plan be aware that many many players do NOT like getting taken captive. They will do insane things to prevent this from hapenning.

You can never go wrong with a Mind Flayer Prison, though I’d personally swap the Mind Flayer’s crappy Dominate Monster with the Aboleth’s Enslave. Make sure to include an (adjusted) Elder Brain, possibly a Ulitharid, Umber Hulks, Ogres, Enslaved Drow and Gith. Not impossibly an enslaved Beholder. Giants don’t work IMO because they’re too big and I don’t see the Illithids having cyclopean sized halls. Maybe leave out Intellect Devourers, except for a creepy room of experimentation. Make sure not to have any undead present and think carefully about including golems. Golems are difficult as they obey completely their masters BUT they are created and controlled by the Arcane which doesn’t mesh with the Mind Flayers at all. Be sure to emphasize alien architecture and layouts, plus have futuristic devices.
For example you could have a prison where the inmates are magically petrified. In the case the other inmates might be statues or some kind of stone cursed. For high levels you could do some kind of stone golem and stone cursed hybrid.

You could use Cave fishers, giant spiders, and maybe mindflayers.

I am asking about the captors. The party is 20th level but are all casters and will have hands and mouths bound by restraints.
It really depends on the prison.
If you are going for a drow prison then I suggest:
