So I'm currently in the process of learning how to DM as well as introducing a bunch of new players to DnD. We're doing a few one-offs before we start a proper campaign, just to get people introduced to mechanics, role-playing, etc. One of the ideas I had for a one-shot was to do some sort of prison break. I was thinking the characters have done something to anger the Fey courts and are therefore in Fey prison. My question is what kinds of Fey do you think would be guarding a Fey prison? What kinds of safeguards would they have in place to prevent people from escaping? I was thinking that it's also a prison for Fey, so there's obviously going to be anti-magic wards and the like, but I'm not sure what else and what kinds of creatures they'd have as guards... Any help would be appreciated!

Here's a pretty basic prison-dungeon layout you can use to simulate a Fey castle.
From there you just need to pick a Fey lord like an Autumn Eladrin or an Annis Hag and from there just populate with other fey creatures or random servant monsters.
When I used this map for my Christmas special game for my players, I put an Ettin in the throne room in a Santa-like outfit. There was a Dryad in the Research Chamber bound to a Christmas Tree, there were Deep Gnome (Svirfneblin)s all over the place acting as servants, there were a few Minotaur guards flavored as "reindeer men", and a Wyvern was guarding the magical item they were trying to steal in the Shrine. I'm pretty sure there was a Gelatinous Cube roaming around as well.
The sorts of fey that players might encounter escaping the prison and the sorts of defenses used would depend on the alignment of the court they've upset.
That's a good start. It sets the tone for the prison as well as the extent of measures their captors will take. The next question would be: what will be your players' characters' starting level?
I was thinking somewhere around level 5-7. High enough to make it interesting and so they have some buffer abilities/hp to mitigate their lack of equipment for the first little bit.

Whatever creature you decide to use as guards or jailers, when the players are found to have escaped, have their captors turn loose a pack of yeth hounds. Redcaps and hags would be good choices of an unseelie nature to serve as guards, jailers, or random denizens interested in the the players not getting away.
