Sounds fun. Just try to make it more exciting than whaling on the walls until it collapses. Have something inside the house that needs to be removed or destroyed, or something like that.
Mimic building? Absolutely. My players encountered a giant mimic disguised as small house in the middle of nowhere. It had a lantern hanging over the door, anglerfish-style.
My personal suggestion: I gave its Bite attack a damage boost, and gave it a Swallow Whole ability, so the fight became more about the party pulling each other out of its grip before it could do bite/swallow attacks on them, rather than just a standard beat-down.
10/10 encounter for everybody involved (DM and players), definitely recommend a mimic disguised as a building.
Mimic buildings are one of the best things, but what's even better is tricking your players into thinking its a mimc and it's really just a high-tech gnomish building. Watching them freak out as a wall swallows one of them is always a good experience in my opinion though.

I actually love the idea of a "mimic house" but with a twist -
The house is sentient and alive, but is not a mimic. It is, however, infested with them!
The mimic house is haunted, and the mimic (which can communicate, canonically) is asking the party (using a mimic-person) to get rid of the ghosts, because it can't do it itself! The party when they realise first that the house is a mimic, and then that it genuinely needs their help, could be brilliant! Or they might just blow the house up!
The house seems like a mimic, but it is actually a colony of faerie-dragons in the attic using their illusions to mess with the party, delighting in the wanton destruction the party is dishing out as they destroy all of the priceless heirlooms they think are attacking them!

Started playing AD&D in the late 70s, took a 40 year hiatus, re-started with 3.5 and 5e in 2023
That stat block would need a lot of tweaking to be a mimic, so much that you're basically just making a new monster that looks like a building.
