I like hill giants. There basically the goblins of giants, you can find them anywhere and they will treat eveeyone like shit. But i wanted to try something new. I wanted to try and make one an npc for the party. Maybe it was banished from the tribe and the players show it kindness thus making a friend? What do you guys think?
Having a hill giant as an NPC/Hireling/Friend is going to cause some interesting problems for the Party though.
Can they take him in town? How will the locals react? Where do you bed him down? How much does he eat ( and who is paying for that )? Can they take him in ruins or dungeons? What if the Party needs to go to sea?
Also - for you as a DM, how do you have to redesign adventures and encounters to take into consideration there's a Hill Giant in the Party? I don't know what level the Party is, but this could really skew combat situations, and you'll need to take that into consideration when designing.
All questions which could have really interesting answers, :)
If you go this route, I'd make his personality really memorable and interesting. Make him multi-faceted, with his own history, desires, motives, and goals.
It may be tricky to handle - both for you, and for the Party - but it could lead to some cool game moments if handled right :)

What's his (or her?!) story? This amiable hill giant had to come from somewhere, and there must be reasons why not eating tiny humanoids isn't its norm. I mean they are rather tasty after all.
the hill giant was supposed to be an outcast. banish from the tribe and sentenced with their worse punishment, starvation. They would send the punished away with their arms ted behind them so as they would roam the land and still be unable o feed or catch food. the p would find a hill giant weak, gangling, restrained by primitive handcuffs. They save it, it feels grateful, new friend.
Love the idea, it's one I've had also. In my homebrew world hill giants are tribal nomads, and as long as they don't try to eat someone else's sheep everyone gets along fine. In my world everyone can get along given a fair chance.
I know right. Same here. Mine has a different tone to it though. In my world, the race you pick matters. Orcs are seen as savage warmongers, tieflings are hated to the point where a country went on a genocide to wipe them out, drows are feared, goblins to, and there are to many theories about monster from volo and mordenkain to have any sold knowledge or understanding about the monsters in the world.
