Hey everyone! So, I'm currently working on an encounter where I wanted to simply change one weapon for another and I didn't expect it to be such a hard thing for me to figure out. I found myself asking where different stats or modifiers came from. I tried looking through several places for this information and while some of it was useful, I'm just not confident in my current understanding of the mechanics. Maybe I'm just overlooking something obvious? I found this - https://slyflourish.com/tweaking_attributes.html and had the following questions.
Quote - "How does that affect his performance in combat? If his strength started at 14 (+2) and we modified it to 19 (+4) we add +2 to his attacks and +2 to his damage."
Why does the monster get a +2 to both his attacks and damage? How does one determine this information?
Quote - "...so let's take away his shield (-2 AC) and give him a greataxe (1d12 instead of 1d6). Now his attack is +6 for 1d12+4 damage on a hit."
If I understand this correctly, does the +4 added to the 1d12 for damage come from the Gnolls new STR of +4 and if so Is the +6 for attack coming from this modifier plus his proficiency of +2?
With that said here's my specific information of what I wanted to do for my encounter. Take the Bandit Captain from the MM on 344. If my current understanding is correct and I wanted to swap out the scimitar for a battleaxe, would the following be correct?

Melee weapon attack = +4 to hit, Hit: (1d8 + 2) slashing.
yes, though the bandit captain would deal 7 (1d10 + 2) slashing damage instead if they wielded it in two hands instead of one.
