Short background is my PC's will be in a situation in a session or two where they spend a few days in the same town/inn area as they await a caravan. I already have planned out the major events and encounters and interactions that they will he having in that time, and the stuff that will advance the plot forward, but I am looking for some fun ideas for some interactions I can either throw their way or have them witness.
These do not have to be anything too crazy. Just some situations or conversations that could distract them from the things happening in the main campaign, maybe be a little lighthearted or humorous or a little bit crazy, just things that will add a little flavor and life to this time that they are spending in this town-rather then just time passing and them talking to themselves in between the plot points.

Carnival/fair:
some games. (Javelin contest. Archery contest. Guess a pigs weight. Cow pie bingo. Etc.)
fortune teller:
(enough said)
town drama:
witness a married couple arguing about a possible secret affair. Maybe a missing kid fell down a well (c’mon Timmy. Where’s lassie?) maybe a farmer needs help for a harvest and is willing to pay, etc etc.
Classified ads:
”tutoring”, some downtime get started on learning a new language or masons tools etc.
”singing lessons”, earn some coin teaching a tone def X to sing better.
swordplay lessons, same thing but teach someone to defend themselves.
”side quest” come up with some old map or tale of nearby treasure for a side quest trip just to find out the treasure is long gone, but it was a fun trip none the less.
Just a brief advice. Having them witness things that is just for flavor, and not to advance the plot or at least provide to the setting can quickly become boring (since it's only you describing). I would rather have created some "event" or NPC's thy at least can interact with. Doesn't need to be a side quest, but I would rather have a strange merchant from afar with strange goods come to town. By all means, have him have a menagerie or something, but also make sure he has some fun things the players can buy or trade and make him a fun character.
A couple of ideas:
Menagerie (can be used to set up some monsters you have coming their way).
The yearly competition of downhill cheese-chasing (seriously, that's a real "sport). Basically any competition can work, but weird is often good. Wife-carrying, dwarf tossing etc. But try to choose something that the players can compete in, and let it flavor the city.
Some of sort of local festival is always good. Especially if it's something most people wouldn't normally care about, but they just go crazy for this once a year festival.
It can be anything from, like Godrick said, cheese-chasing, Highland games, apples, a certain flower (we have 2 big festivals here a year. One is about apples, one is about the Mountain Laurel. There's even an apple statue). Did you play Far Cry 5? The Hope County Testicle Festival was certainly memorable. There's a celebration in India where they throw colored powered paints at each other, and another place has a huge tomato fight.
