With combat encounter trackers and automated rolling it’s easier than ever to roll dice - and I’ve found that rolling for Hit Dice can add a bit of flavour for the battle.
An Orc with 22 HP? He’s a big brutish Orc that towers over the rest.
An Orc with 10 HP? He’s a runt that the other Orcs push into battle first.
I also like rolling Hit Dice for everything from Polymorphed beings to Druid Wild Shapes... signifying how powerful the casting is at any moment.
The larger the beast, the more it’ll tend to towards the average. But adding just a teeny bit of flavor text to every transformation is kinda fun :)
I do it mostly because giving the enemies different hp, it makes it harder for the players to metagame. If over the course of a fight, they learn every orc has 12 hp, they'll know which attacks to use and which to save.
