I'd actually recommend making it a little more dangerous and having an infected person immediately turn into a zombie when they drop to zero, rather than have it happen the next day. Would be great for an attack on a crowd so the party has to make sure and protect the civilians or they'll turn into zombies as well. It's less of an issue if they just die and don't become a threat until the next day.
I think it would also be a good idea to state overtly within the stat block how to treat the infection. As its worded now failing the save is an instant death sentence for any character, no matter what else they do. It'd be good to note whether it can be healed with Lesser/Greater Restoration, or if it requires Remove Curse or if it can be treated with a successful medicine check or anything.
