The concept for this backstory is you were a high-level paladin before the campaign started. But you broke your oath, maybe spent some time as an Oathbreaker. Then you have a redemption arc. You choose a new Oath.
Mechanically, when you start your redemption arc, you bump back down to level 1. DMs might choose to start here, or when you choose your new Oath at level 3. Probably you join a new level 1 party, unless you want a hardcore challenge of playing level 1 in a level 16 game. After choosing your new arc, you gain features in that subclass. When you surpass the level at which you broke your original oath, you make restitution in the story arc, and start gaining levels in your original subclass instead of your new Oath.
This is similar to Cecil’s arc in FFIV. Lawful Good Paladin -> Lawful Evil Dark Knight -> Neutral Good Paladin of Light. Redemption tied to Golbez’s redemption.
