What does the hybrid form for the class look like? is it the were- form or is it like in the picture provided with the class (a regular humanoid with sharp teeth and claws)? If you bite someone in the hybrid form will the victim be infected or not?

It can look however you want! The one in my group turned into a werewolf, fur and all. I suppose thematically you could have him look more wolf-life as he levels up if you like.
As for transferring the curse, I'd have to read the class again but I don't think that's an issue. I get the sense that blood hunters receive their curse later in life and aren't "true born" lycanthropes. Not sure if that's related but it may be a good "reason" why the curse doesn't transfer.
I’d say do what you want for looks, but the character is meant to become larger, more wolf like with claws and teeth but still resemble your natural form. Also Order members are able to stop infection through blood so I assume that means through combat as well. Infecting another person without the express permission of your superiors is a grave sin against the order so I suggest you don’t. Have fun!

In Campaign 3 Travis is a Order of the Lycan Bloodhunter and his hybrid from looks exactly like a werewolf. So I imagine that either Travis wanted it that way or that's the way Matt designed it to be.
From the “The Burden of Lycanthropy” part of the Order of the Lycan subclass:
“Lycanthropy comes in many forms bound to specific beasts, with wolf, bear, tiger, boar, and rat the best-known variations. The particular strain of the lycanthropic curse defines the physical traits that manifest in a Lycan blood hunter’s hybrid transformation, even as the benefits the curse bestows remain relatively uniform.”
So not only is it written that they can be a wolf, bear, tiger, boar, or rat, as the lycanthropes in the Monster Manual, but it also implies that it can be others… say (as TexasDevin above does), a were-lizard.
In the same passage, it says,
”A member of the Order of the Lycan cannot spread their curse through blood unless they wish to, and one of the most sacred oaths of this order is to never infect another creature without the order’s sanction.”
While this confirms offspring of Lycan Blood Hunters can inherit the curse (if the parent wishes and with consent of the Order), this gives no mention of whether or not biting can spread the curse. If you’re going strictly by Critical Role rules, then yes, it can be done; Gurge Kisgregg of Campaign 3 (who had undergone the Taming) was forced to bite others who were thus inflicted with the curse of lycanthropy.
I've got a question. 'The Taming' is the phase that we go through to become an Order of the Lycan Blood Hunter, but how long does that take? Also, where would the Blood Hunters be found? I'm thinking to just homebrew them into a large city or something, but I still don't know if that would make sense for them.
