I don't think it is possible. You could give a mechanical advantage that is lost if a certain weapon or armor is used (like monks), or give a lore reason certain items would br avoided (like druids).
Why don't you want it to be proficient in heavy armor? And if it is a subclass that benefits DEX and stealth, heavy armor will probably be avoided anyway.
It's not possible at this time - subclasses are designed to add features, rather than restrict the player by removing them.
As others noted, a much better option is to encourage the player of the subclass to not have the character wear heavy armour by granting features that do not function if heavy armour is worn. This is more the design route that the game designers take.
How do you do this? For example, I created a buff that would add your Proficiency Bonus to your AC if you don't wear armor. So if they wear armor it's still adding the bonus, where do I make the IF THAN....

There should be an option for setting or modifying unarmored defense, which is what you want.

I'm making a subclass for the fighter, but don't want it to be proficient in heavy armor… I just don't know what to do about that.
