As a map, I don't see any problem. It also allows you to visually show vertical portions of the map. The potential problems I see are: How are you going to do combat? If your just having combat be as it is in Minecraft then what makes D&D? Wouldn't it just be an Adventure Mode Minecraft game with someone spawning monsters, items, and voicing some things? If it was me, I'd keep it in creative mode and simply use the Minecraft as the map.
I actually have a solution to that. He can spawn mobs with no AI and teleport them when they move.
For that matter a series of command blocks could keep players from leaving their spaces too without permission.
Can use custom data packs to reskin mobs, and scoreboard to track damage and initiative (getting advanced at this point, I never figured out scoreboards myself).
Well I was just going to have it be blocks holding the spaces for the enemies, and the combat is normal DND. It's a lot more simple than no AI mobs, and they can easily represent their sized on battle maps that way. The world will be in adventure mode, and be more leaning on Minecraft lore than DND lore, and more DND mechanics than Minecraft mechanics, but still have elements from both games in those parts of it.
I'm also not greaaat at command blocks, but have some in use in the map so far.
You might be able to use the Minecraft AR app as a sort of VTT, if you're able to, of course. Might help in some ways.

Hey just saying the origins mod and all its addons would be amazing for class and race systems
also a mod called Starter Kit would be great as it lets you start the game with a set of items that you as the GM could chose
another mod is LevelZ which adds an xp leveling system so for example you need level five in the mining skill to use an iron pickaxe and so forth.
