@Snievan - I bet that getting out of the gelatinous cube is like escaping a grapple and uses Finley's action, so he cannot disengage in the same round. Still, I think that it's safer to move away from it and risk a hit from a pseudopod while absorb elements is still running than it is to stay close and risk having it roll over Finley and "engulf" him again.)

@Snievan it takes an action to break out of the gelatinous cube so you cannot disengage, though you can back up and the gelatinous cube would have opportunity attack.
An engulfed creature can try to escape by taking an action to make a DC 12 Strength check. On a success, the creature escapes and enters a space of its choice within 5 feet of the cube.
(I will wait to see if Finley stays right next to the cube or takes the change to back up risking an opportunity attack)
FYI - I forgot to say it last round, but if it looked like the vines didn't even slow down the gelatinous cube, Valrieth would release her concentration on the entangle spell.
Val had hoped that if it couldn't hold the gelatinous cube, it would at least help the party get farther away from it. But if it's not affected by the difficult terrain, then there's no reason to maintain concentration on that spell. In particular, she wouldn't want to slow down Finley while he's trying to get away from the gelatinous cube if it's still moving at full speed!

This description here makes me think that even with the gelatinous cube out of the well, nothing has changed. For example, is the water level is still 30' below the top of the well?)

Valrieth was poised to cast another spell and is surprised by the sudden retreat of the creature. She begins to hurry back over to the stairs that lead down into the pool. As she dashes over, she calls over to Finley, still tied to the other end of the rope with her, "Are you OK, Finley? I guess we finally hurt it? Or maybe it just doesn't like the taste of your armor?"
If Finley confirms that he's fine, Val says, "Great! If we're quick, maybe we can get it to come back out so that we can destroy the horrible blob before it goes all the way back down to the bottom and clogs the well again? It was hard enough for me to see it last time, and it almost got me! I really don't think we want to wait until we have to swim down and fight it in underwater?!" You can't tell whether she meant that last part as a question or not, but she's clearly terrified of the thought.
Val explains, "Last time, it reacted when I disturbed the water around it. If we had a pole, it might react if we prodded it. Or...maybe lure it out with something that it would consider food? I mean, something other than me this time!" Val stops at the top of the stairs at the southeast of the platform and doesn't go back into the pool yet.
(I just made a change, so the water is much closer to the top of the well. If you can find or make something long you can prod the cube out of hiding)

Thank ye fer askin’.” Finley replies, glancing at where the cube went and then around the room. “Let’s see what we can find, some kind of pole or heavy object we can swing with my rope to annoy it enough to come out, aye? Ah know a few tricks but most o’ me work is with armorsmithing”

The map of B1 shows a couple of wooden objects that are > 10' long along the east and west walls. Are those the "shelves"? Are they like free-standing shelving units? Or more like shelves mounted to the wall?

Octavian was in the process of helping Finley when Finley was able to drag himself out of the gelatinous cube.
He then lobs another fire bolt at the creature.

Yes, during the fight the water has filled the well almost to the top. From the top of the well to the water is only 3 ft.
